Is it just us, or is it that when everything else seems to be falling apart, Tauruses are a rock of dependability in an oasis of calm? Taureans– we can’t relate to your very practical and grounded nature, but we absolutely can relate to your love of beauty and emptying our bank accounts at a spa in a commitment to our own comfort. I guess we just share that sense of determination and the pursuit of life’s little luxuries with our Taurus friends!
This earthy hummus is made with vibrant, fresh green peas, for all those Taureans who are perfectly happy eatng something predictably good over and over again.
We use fresh peas from the farmer’s market because they are perfectly in season this time of the year. If you can find them, they add a great seasonal freshness to the dish! If not, blanch some frozen peas before using them. The taste will still be incredible.

Taurus Terra Verde Hummus
Ingredients
- 1 cup shelled fresh peas
- 1 1/4 cup chopped parsley
- 1 cup garbanzo beans
- 2 tbsp tahini
- ~2 tbsp juice of 1 lemon
- 2 tbsp olive oil
- 1 pinch salt and pepper
- toasted pepitas, roasted broccoli florets, snap peas and micro greens to garnish, optional
Instructions
- Combine the peas, parsley, garbanzos, tahini, lemon juice, olive oil, salt and pepper in a blender and puree until very smooth. Transfer to a shallow bowl and garnish with a drizzle of olive oil, toasted seeds, broccoli and micro greens. Serve with toasted bread.
