Taurus Terra Verde Hummus

Ingredients

  • 1 cup  shelled fresh peas
  • 1 1/4 cup chopped parsley
  • 1 cup  garbanzo beans
  • 2 tbsp tahini
  • ~2 tbsp juice of 1 lemon
  • 2 tbsp olive oil
  • 1 pinch  salt and pepper
  • toasted pepitas, roasted broccoli florets, snap peas and micro greens to garnish, optional

Instructions

  • Combine the peas, parsley, garbanzos, tahini, lemon juice, olive oil, salt and pepper in a blender and puree until very smooth. Transfer to a shallow bowl and garnish with a drizzle of olive oil, toasted seeds, broccoli and micro greens. Serve with toasted bread.
