A feel-good summer snack inspired by an odyssey of Mediterranean flavors

Greek influence echoes through literature, architecture, culture, and cuisine. After all, Greek food is legendary for its vibrant celebration of life. When I close my eyes, I can still remember myself as a little girl and taste the earthy dill and bright citrus flavors that were pinnacles of my summers spent in the Mediterranean. It’s something that I’ve carried with me into my adult life and have been able to share so well with Becca.
This summer salad captures that spirit and essence of Greek elegance with the fresh, seasonal ingredients like lemons, tomatoes, cucumbers and a symphony of herbs. It’s a testament to the deliciousness of whole foods, perfect for picnics, poolside gatherings, or anytime you need a fuss-free and flavorful snack.

Tip!
This salad is a thousand times better if it has time to marinate. Make it up to 12 hours ahead and store, covered, in the refrigerator until ready to serve.

Mediterranean Herby White Bean Salad
Ingredients
- 3 1/2 tbsp olive oil extra virgin
- 2 tbsp lemon juice fresh squeezed
- 1/2 tsp dijon mustard
- 1 15oz can cannellini beans rinsed and drained
- 3 oz snow pea pods sliced into bite-size pieces
- 1 cup cucumber chopped
- 3 tbsp shallot chopped
- 2 tbsp fresh parsley chopped
- 2 tbsp fresh dill chopped
- 1/4 tsp sea salt
- 1/4 tsp fresh cracked black pepper
- 1/2 heirloom tomato sliced into wedges
Instructions
- In a large bowl, whisk together olive oil, lemon juice, mustard, salt and pepper.
- Add beans, snow peas, cucumber, shallot, parsley and dill. Toss well to combine.
- Serve over tomato wedges lightly drizzled with olive oil.
