Mediterranean Herby White Bean Salad

Ingredients

  • 3 1/2 tbsp olive oil extra virgin
  • 2 tbsp lemon juice fresh squeezed
  • 1/2 tsp dijon mustard
  • 1 15oz can cannellini beans rinsed and drained
  • 3 oz snow pea pods sliced into bite-size pieces
  • 1 cup cucumber chopped
  • 3 tbsp shallot chopped
  • 2 tbsp fresh parsley chopped
  • 2 tbsp fresh dill chopped
  • 1/4 tsp sea salt
  • 1/4 tsp fresh cracked black pepper
  • 1/2 heirloom tomato sliced into wedges

Instructions

  • In a large bowl, whisk together olive oil, lemon juice, mustard, salt and pepper.
  • Add beans, snow peas, cucumber, shallot, parsley and dill. Toss well to combine.
  • Serve over tomato wedges lightly drizzled with olive oil.
