Mediterranean Herby White Bean Salad

- 3 1/2 tbsp olive oil extra virgin
- 2 tbsp lemon juice fresh squeezed
- 1/2 tsp dijon mustard
- 1 15oz can cannellini beans rinsed and drained
- 3 oz snow pea pods sliced into bite-size pieces
- 1 cup cucumber chopped
- 3 tbsp shallot chopped
- 2 tbsp fresh parsley chopped
- 2 tbsp fresh dill chopped
- 1/4 tsp sea salt
- 1/4 tsp fresh cracked black pepper
- 1/2 heirloom tomato sliced into wedges
In a large bowl, whisk together olive oil, lemon juice, mustard, salt and pepper.
Add beans, snow peas, cucumber, shallot, parsley and dill. Toss well to combine.
Serve over tomato wedges lightly drizzled with olive oil.
