You may already be familiar with classic Italian cocktails that seem to fit the occasion perfectly– the Negroni, Negroni Sbagliato, Bicicletta, and most famously, the Aperol Spritz– except, these are all aperitivos. That is, drinks made to kick off an evening and whet your appetite (certainly not something you would want after a meal.)

What you need is a digestivo, a drink made for winding down and helping you to digest your dinner. Enter the Sgroppino: a classic Italian cocktail that’s super easy to make and totally delicious. It’s a mix of refreshing lemon sorbet, bubbly Prosecco, and usually a hint of grappa.

In Venetian dialect, “sgropin” means “to untie,” a nod to the drink’s ability to loosen up and refresh your palate after a meal. It’s the ideal post-dinner digestif and a quite enjoyable way to close a meal.

Ingredients

  • 3/4 oz vodka
  • 1 oz prosecco
  • 1/2 cup lemon sorbetto

Instructions

  • Combine all ingredients in a cocktail shaker or mason jar and stir quickly to whisk until smooth. Pour into a glass and garnish with baby basil leaves.
