Smoky Tomato Basil Leo-rita
A refreshing Leo-approved smoky, tangy, slightly salty margarita

- 1 beefsteak tomato juiced
- 1 oz maple syrup
- 2 oz lime juice
- 1 handful basil leaves
- 2 oz mezcal
- pinch sea salt
- 3 mini orange tomatoes for garnish
Rim your glass with tajin and place in freezer to chill.
Juice tomato by grating it into a bowl and then straining 4oz of tomato juice into the shaker with a mesh sieve and back of a spoon.
Clap basil leaves to release oils and add with maple syrup to the cocktail shaker. Using a muddler or back of a bar spoon, press down and stir well. Mix in lime juice, mezcal and small pinch of sea salt. Add ice and shake for at least 30 seconds.
Add a large sphere of ice to your chilled glass. Strain in drink and garnish with mini tomatoes.
